Dry ginger (sonth) is produced by washing, peeling, and sun-drying mature ginger rhizomes until they turn pale buff and rock-hard. The drying process concentrates shogaols, producing a sharper, more penetrating heat than fresh root alongside warm citrus notes. Supplied as unbleached whole hands, sliced flakes, and ground powder.
