Asafoetida
Lump resin, compounded powder
Asafoetida is the dried latex gum tapped from the living taproots of giant wild fennel species. In its raw dried state it has a strong sulfurous aroma, but gentle frying in cooking fat unlocks a savoury allium bouquet reminiscent of leeks and sautéed garlic. Available in solid natural tears/lumps and free-flowing compounded powder.
