Ceylon cinnamon is prepared by hand-rolling the paper-thin inner bark of Cinnamomum verum into soft, cigar-like multi-layered quills. It possesses a light tan color, fragile crumbly texture, and a refined sweet-floral aroma without harsh bitterness. Available as whole uncut quills, cut lengths, and fine ground powder.
