Ancho chillies are the sun-dried ripe form of poblano peppers, turning a deep mahogany-black with a pliable, leathery skin. They carry a very mild warmth dominated by complex fruitiness reminiscent of prunes, raisins, and mild unsweetened cocoa. Provided as whole flattened pods, coarse cuts, and ground powder.
